Darlene’s Carne Frita
Fried Flank Steak:

·         2 pounds flank steak
·         2 Tbsp Darlene’s Sauteed Sofrito
·         2 Tbsp olive oil
·         2 medium yellow or Spanish onions, sliced
·         1 Lemon (Juiced)
·         2 sliced bell peppers

Darlene’s Dry Seasoning rub:

·         1Tbsp Dried Dominican Oregano Leaves
·         1Tbsp garlic powder
·         1Tsp Black pepper
·         1Tbsp onion powder
·         1Tbsp Adobo or all purpose seasoning
·         2 Tsp salt
·         1Tbsp Chives

Garnish:
·         Chives
·         Lemon Wedges

1.    Season steak with 1 tablespoon of Darlene’s Sauteed Sofrito
2.    Place steak in a covered pot.
3.    Simmer covered until tender, about 1 ½ hours.
4.    Allow the steak to cool in the liquid, covered. It's common to place the entire covered pot in the fridge and proceed to frying the next day.  I sometimes leave it overnight
Mix the dry spices
Cut meat across grain in 1 ½ Inch  pieces
5.    Pound flat
6.    Add splash red wine
Heat olive oil in a skillet or griddle
7.    Fry meat until it browns to your liking (Usually 3-5 minutes)
8.    Sprinkle chives
9.    Place on platter with the lemon wedges as a garnish.
