Darlene the Gourmet Diva’s 
Favorite 3 Leches Cake

Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup of soft butter
  • 1 teaspoon of vanilla extract
  • 1/2 cup sugar
  • 3 eggs
  • 1 cup of whipping cream
  • 1Tsp of lime grind
  • 2 cups whole milk
  • 4 cups of sweetened, condensed milk
  • 2 cups of evaporated milk
  • ⅓ cup of sugar
Darlene the Gourmet Diva Says:
  1. Preheat oven to 350 °F
  2. Butter up and flour a baking pan (5-inch tall X10 inches in diameter).
  3. Beat butter and sugar until fluffy until it is a light yellow color (about 3-4 mins).
  4. Add eggs individually (allow eggs to beat completely before adding next)
  5. Add vanilla, baking powder, lime grind and flour
  6. Beat until creamy (careful not to overbeat batter)
  7. Pour batter into the baking pan.
  8. Bake at 350 for about 35 minutes or until toothpick comes out clean from the center
  9. Cool to room temperature
For 3 Leches sauce:
  1. Mix milk, evaporated and condensed milk in a bowl
  2. Pour the milk mixture on top of the cake and soak in the refrigerator,
  3. Ensure you continue spoon bathing it regularly until it has absorbed half of the liquid.
  4. Beat the whipping cream until it thickens
  5. Add sugar and keep beating
  6. Spread  whipped cream over top of cake
  7. Refrigerate for another 30 minutes
  8. Top with sliced strawberries or cherries
