Tortitas de Calabazas*
Carla's Pumpkin Fritters:

Serves 6-10 Great for buffets
Ingredients*:
- 3 Cups cooked mashed pumpkin (fresh or canned)
- 1/2 Tsp of salt
- 2 Lightly beaten eggs
- 1 Tbsp Vanilla Extract
- ¼ Tsp cinnamon
- ½ Cup of sugar
- 4 Tbsp Butter or Margarine or ½ cup canola/frying oil
- ½ Cup of white or wheat flour
According to Carla Reyes:
- Using a fork, mix all ingredients well to the consistency of a thick pancake batter. (I prefer using fresh pumpkin. I save the water I use to boil pumpkin in to use as I mash and blend ingredients)
- Fry table-spoonfuls in butter or oil in medium heat until golden on both sides
- Lay on napkin and allow oil
*Darlene the Gourmet Diva says: “you can sprinkle powdered sugar before serving for a zepoli effect yum”
